These jammy dodger biscuits are great fun to make and can be made in a variety of shapes. With a simple biscuit recipe you can use any variety of filing for the middle including jams, peanut butter or chocolate, yum!
Remember
You’ll need half the biscuit mix for the tops and half for the bottoms.
Ingredients
100g butter
150g caster sugar
1 large egg
1 tsp vanilla extract
1 Jar of jam
200g Plain Flour
Method
Pre-heat the oven to 190C/170C fan/gas 5.
Mix the softened butter and sugar in a bowl.
Add the egg, vanilla extract and flour then mix together.
Sprinkle some flour on a surface and roll out the biscuit dough to an even 5mm thickness.
Use a shape cutter to cut an even number of biscuit shapes
Remember to cut holes in the middle of half of the biscuit shapes.
Spread these on baking paper on top of a baking tray and cook for 7-10 mins.
Remove from the oven and allow to cool.
Spoon the jam on to the base biscuits and pop the biscuits with holes on top.
Kid’s Guide
Ask a grown up to turn on the oven.
Measure 100g of butter.
Put the butter in a bowl.
Measure 150g of caster sugar.
Add the caster sugar to the butter.
Stir the caster sugar and butter until they combine.
Measure 200g of plain flour.
Add the flour to the bowl.
Add 1 egg to the bowl.
Add 1 teaspoon of vanilla extract to the bowl.
Mix all of the ingredients together,
Roll the biscuit dough flat.
Use a shape cutter to cut the biscuit shapes.
Cut small holes in the middle of half of the biscuits.
Place some baking paper on a baking tray.
Play the biscuits on the baking tray.
Ask a grown to put them in the oven.
Once cooled spoon some jam on to each biscuit without a hole.
Pop the biscuit with a hole on top of them to make a sandwich.
